Oatmeal Pancakes

I got this recipe from the South Beach Diet cook book.

1/2 cup rolled oats
1/4 cup low fat or fat free cottage cheese
4 egg whites
1 tsp vanilla
1/4 tsp cinnamon
1/4 tsp nutmeg

Blend all ingredients in blender until smooth. Cook in frying pan with cooking spray. Top with Smart balance or I can't believe it's not butter, or peanut butter(my favorite) and you can use sugar free or low sugar syrup. It is also delicious with fruit.

Slow cooked chicken with veggies.

I love this one we make it all the time.
What you will need:
2-3 chicken breasts(you can so more if you like just increase the olive oil)
1/2 green pepper cubed
1/2 red pepper cubed
1/2 zucchini sliced
1 carrot sliced
1/2 onion sliced (optional) I put the onion in for flavor, but I don not it them.
5-6 garlic cloves (optional) I only use garlic if I have it.

In a Pyrex baking dish put the chicken and the top with all the veggies sprinkle with Mrs. Dash and drizzle about 2-4 T olive oil all over. Cover with tin foil and Bake at 325 to 350 until done. If I have time I will cook it at 300 and so it is really moist.

Serve with Pasta I use the Barilla Plus it is on my diet and I love it, or with brown rice. After you serve top with about 1 T fresh Parmesan.
Enjoy!

Black Bean Salsa

I can have this one occasionally. It is so yummy you have to try it!!

2 cans black beans, drained and rinsed
1 can corn, drained
2 tomatoes diced
1 sm onion diced(optional)
2 avocados, diced (I like to use 3)

Dressing:
I don't do this I add about 1/2 T of olive oil and 1/4 tsp vinegar and 4-6 T lime juice and it is so delicious. If you want to try the dressing here it is:
4 tsp. dried cilantro
1 T Olive oil
1 T. Red wine vinegar
1 tsp. salt
1 tsp. pepper
4-6 T lime juice
mix and serve with chips of your choice. I like Multi grain from Costo, because I can eat them on my diet.
